Ingredients
  1. 2 Organic egg whites
  2. 1/4 Cup Organic Agave
  3. 1 Tsp organic vanilla extract
  4. 2 Tbsp Almond Flour
  5. Pinch of Himalayan Pink Salt
  6. 2 1/2 Cups Organic Shredded Coconut
  7. 1/3 Cup Vegan Chocolate Chips
  8. 1 Tbsp Orange liquor (this is optional but does give an extra orange sweet taste and make sure it's Gluten-Free!) If you don't use this I would recommend adding 1 tbsp more of agave.
Instructions
  1. 1. Preheat the oven to 325 degrees and line a baking sheet with parchment paper.
  2. 2. In a large bowl, beat the egg whites. Add the agave, vanilla extract, Almond flour, salt, and optional liquor. Whisk until combined. Then stir in the coconut.
  3. 3. Place small mound onto paper (I measured out 8) and place a few inches apart onto the prepared baking sheet.
  4. 4. Bake for 20 Minutes (or until all edges are browned). Transfer cookies to a rack and allow to cool for 5-10 minutes before dipping.
  5. 5. Melt the chocolate in a very small glass bowl in the microwave. I heat for 60 seconds. Dip the base of each macaroon into the chocolate then place onto a tray lined with wax paper (this will prevent sticking). Place in the refrigerator for at least 10 min for the chocolate to harden.
