For Muffins
  1. 2 cups of organic almond flour
  2. 1 tbs. of organic coconut flour
  3. 1/2 tsp. of baking soda
  4. 1/2 tsp. of organic cinnamon
  5. 1/4 tsp salt
  6. 1 whole organic lemon squeezed
  7. 1 tbsp of lemon zest or I just used orange peel seasoning
  8. 3 organic eggs, whisked
  9. 1/4 cup raw organic honey
  10. 1/4 cup organic agave
  11. 1/3 cup coconut milk, full-fat in a can
  12. 1/3 cup coconut oil
  13. 1 tsp. of organic vanilla
  14. 1/2 cup of blueberries
For the topping
  1. 4 tbsp of organic coconut sugar
  2. 3 tbsp of organic unsweetened coconut
  3. 1/4 cup squeezed organic lemon
Instructions
  1. Pre-heat oven to 350-degrees. In a medium bowl mix together all wet ingredients except blueberries.
  2. 1. In a small bowl mix all dry ingredients
  3. 2. Add & mix dry ingredients into the wet ingredients
  4. 3. Fold in blueberries
  5. 4. Fill muffin cups 2/3 full
  6. 5. Bake 18-20 min (Insert toothpick, if clean when pulled out then they're done)
  7. 6. Remove from oven and allow to cool before topping
  8. 7. Mix topping ingredients together and place on top of muffins. Sprinkle more coconut for extra added white coconut look.
