I often crave a meal with very little carbs. This fits a paleo lifestyle well. With Paleo Jamaican chicken over spiralized zucchini (zoodles), you can’t beat the curry tropical flavor that goes into this recipe. So easy, so light, so tasty. The first time I tasted Jamaican Chicken, I could remember all the flavors that remained on my palette. I HAD to go home and make my own. But how was I going to do this, gluten-free, dairy-free, and low in carbs? Fusion came to mind. Inspiration of San Francisco Cuisines definitely helped inspire this bunch of deliciousness. Is that even a word?

With two kids, I wanted to create a fast and easy recipe that didn’t require too many steps or an all day marinade. I decided to try Red Ape Cinnamon’s Organic and Gluten-Free Rasta Shake in my chicken. WOW was I pleased! For Chicken
  1. 1 lb organic boneless chicken thighs
  2. 2 tbsp Red Ape Organic Cinnamon "Rasta Shake"
  3. 1 tbsp organic paprika
  4. 1 tsp organic cayenne pepper
  5. 1 tsp organic garlic powder
  6. 1 tsp sea salt
  7. 1 tsp organic pepper
  8. 1 tsp oregano
  9. 2 tbsp organic extra virgin olive oil
For Zoodles
  1. 2 large organic zucchinis spiralized
  2. 1 tbsp organic curry
  3. 1/2 tbsp organic garlic powder
  4. 1 tsp sea salt
  5. 1 tsp organic pepper
Instructions
  1. 1. Cut chicken thighs in halves or quarters
  2. 2. Take a large bowl and mix all ingredients together and add in chicken. Marinade for at least 30 minutes
  3. 3. Take a large wok and heat to high on stove top. Add chicken in, cook and stir for 10 minutes. Reduce heat to low and cook and stir for additional 8-10 minutes.
  4. 4. Mix spiralized zucchinis with zoodles marinade in a bowl. Heat pan on stovetop to medium high and cook for only two minutes. Any longer and you will achieve a soggy appearance.
  5. 5. Place chicken over zoodles and serve
