Paleo Sweet Potato Crumb Casserole

Sweet potato casserole is so nostalgic especially around the holidays. But it doesn’t have to only be a holiday dish! It’s so hard to find a good Paleo Sweet Potato Crumb Casserole recipe that tastes just like the flavors you remember growing up during the pre-allergy days.  

Paleo Sweet Potato Crumb Casserole is great around Thanksgiving but honestly the ingredients are so nutritious for you, why not have it all year round? Instead of stuffing your face in some pie that’s going to make you feel like you just swallowed an elephant, how about filling yourself with a healthy, delicious sweet potato casserole?

Taking it back to the basics with this Paleo Sweet Potato Crumb Casserole and getting creative is what you have to do these days. This is a guilt free pie, that you can honestly feel good about eating – OH and did I mention that it’s absolutely delicious?

I firmly believe in clean ingredients, especially those that contribute to help burning energy and fuel. I mean that’s what us humans are designed to do. We aren’t meant to eat all these pre-made pies filled with preservatives, hormones, pesticides and ingredients that we can’t even pronounce. It is so important to know which ingredients we are adding to our baking to ensure we are consuming quality whole foods as well. One of the prime ingredients I use in all my cooking and baking is a good quality extra virgin olive oil. Not all olive oils are made the same, and it’s important to know if your olive oils are blended with others behind the scenes (and they don’t tell you) or when it was harvested. That’s why I love and trust Kasandrinos Extra Virgin Olive Oil. I used a little to make my organic pecans extra toasty………

Crumb topping
  1. 1.5 cups almond meal (I got from trader joes)
  2. 1/2 cup of organic vegan butter or ghee melted. I have tried both, if you can eat ghee I highly recommend using omghee butter cultured ghee
  3. 3/4 cup organic coconut sugar
  4. 1 tsp organic vanilla extract
  5. pinch of sea salt
Candied Pecans
  1. 1 cup raw pecans
  2. 1/4 tsp sea salt
  3. 1 tsp organic cinnamon (I used Red Ape Cinnamon. Code RGFM15 gets you 15% off upon checkout)
  4. 1 tbsp organic vegan butter or ghee
  5. 1 tbsp organic organic olive oil (I used kasandrinos extra virgin olive oil)
  6. 1/4 cup organic coconut sugar
  7. (optional 1 tbsp organic maple syrup) provides a little sticky texture. If you omit the maple syrup then use another TBSP of coconut sugar instead for extra sweetness. but I enjoy the maple flavor. (I used crown maple syrup)
  8. 1 tsp organic vanilla extract
Filling
  1. 5 organic small sweet potatoes peeled (I used 5 in a bag from Trader Joes)
  2. 1 tbsp organic vegan butter or ghee
  3. 1 organic egg
  4. 1/2 cup organic full fat coconut milk (in a can)
  5. 1/4 cup organic coconut sugar
  6. 1/4 tsp sea salt
  7. 1 tsp organic cinnamon
  8. 1 tsp organic nutmeg
  9. 1 tsp organic vanilla extract
Instructions
  1. 1. Boil sweet potatoes in water until thoroughly cooked and soft, strain & cool down.
  2. 2. While potatoes are boiling, prep your candied pecans. Using the ingredients above for the pecans: In a frying pan, heat olive oil on medium. Toss in your pecans and brown/toast on all sides (approx. 2 min) Don't burn them! Add in the butter and sugar and reduce to low still tossing for another 2 min. Add in the vanilla, salt, cinnamon and vanilla. Remove from heat.
  3. 3. Prep your crumb topping using ingredients above: In a large bowl, toss in all ingredients. Use a spoon to mix it thoroughly to create a medium crumb like texture. You might not use all the crumbs but don't revise recipe.
  4. 4. In another large mixing bowl, combine all the filling ingredients above and mix with a fork.
  5. 5. In a medium casserole dish, add in the sweet potato filling. Coat the entire top with the crumb mixture and the add the pecans.
  6. 6. Heat oven to 350 degrees.Place in oven for 30 min.
  7. 7. Remove and cool for 15 min before serving.
